SIMPLE WITH FIG SAUCE AND MASHED POTATOES WITH MACADAMIA NUTS

MAIN INGREDIENTS
2 beef tenderloin medallions
2 potatoes
1 handful of macadamia nuts
1 glass of milk
1 egg yolk
5 fresh figs
50g butter
Olive oil
1 teaspoon sugar
1 pinch of ginger
1 vanilla pod, seeds only
1 splash of brandy
1 splash of soy sauce
1 splash of liquid cream
Salt
RECIPE PREPARATION
To prepare the recipe for Sirloin with fig sauce and mashed potatoes with macadamia nuts:
First, in a pressure cooker with boiling water and a splash of oil, cook the potatoes cut in half for about 6-7 minutes.
Next, we lightly crush the walnuts. Add the potatoes, the yolk, a splash of cream and a pinch of salt. We continue grinding until we get a puree. We add milk until it reaches the desired thickness.
On the other hand, we prepare the fig sauce. To do this, in a pan with butter, sauté the pulp of the figs and add the ginger and vanilla. We let the pulp dissolve.
Next, we add the brandy and flambé. Add the cream and soy and stir well. We strain and reserve.
In a very hot frying pan, we grill the meat back and forth.
We plate the sirloin, cover it with the fig sauce and accompany it with the mashed potato.
We serve.
